Ingredients:

  • 1 large or 2 small zucchini

  • Salt

Tools:

  1. Vegetable Peeler

  2. Mandoline

  3. Kitchen Knife

Instructions:

1. Vegetable Peeler (Wide, Flat Noodles)

  • Prepare the Zucchini: Rinse and dry the zucchini. Trim off the ends.

  • Peel into Noodles: Hold the zucchini and use a vegetable peeler to peel off long, wide strips. These strips will resemble pappardelle pasta.

  • Tip: Rotate the zucchini as you peel to keep the noodles even.

2. Mandoline (Long, Thin Strips):

  • Prepare the Zucchini: Rinse and dry the zucchini. Trim off the ends.

  • Slice into Noodles: Fit the mandoline with the julienne blade or slicer. Gently slide the zucchini lengthwise across the blade to create long, thin strips similar to fettuccine.

  • Tip: Use the guard provided with the mandoline for safety.

3. **Kitchen Knife (Shoestring-like Noodles):

  • Prepare the Zucchini: Rinse and dry the zucchini. Trim off the ends.

  • Slice into Noodles: Cut the zucchini lengthwise into thin planks, then stack the planks and slice them into thin sticks, like shoestring fries.

  • Tip:This method allows for a custom thickness of your noodles.

Cooking or Serving Your Zucchini Noodles:

- You can eat them raw ! Zoodles: Sprinkle the noodles with salt and let them sit in a colander for 10 minutes to remove moisture. Rinse and pat dry before adding to salads or cold dishes.

- For Cooked : Sauté the noodles in a pan over medium-high heat for about 3 minutes until softened. Season and toss with your favourite sauce.
