Cauliflower Hash Browns

Ingredients:

  • 3 cups cauliflower rice** (instructions below)

  • 1/2 cup shredded mozzarella (or any cheese cheese)

  • 1 large egg

  • 1/4 tsp garlic powder (optional)

  • 1/8 tsp black pepper (optional)

** Cauliflower Rice : put chunks of raw cauliflower and blitz in a food pressor. Pan fry in olive oil until dry but not crispy. (Add onion/garlic to taste) **

Instructions:

1. Preheat the Oven: Set your oven to hot (200°C) and line a baking tray with parchment paper.

2. Mix Ingredients: In a large bowl, combine the cauliflower rice, egg, cheeses, and seasoning. Mix until well blended.

3. Shape Hash Browns: Scoop a handful of the mixture, press it down to compact, then drop onto the prepared baking sheet. Flatten each mound to about 2cm thick and shape as desired.

4. Bake: Space the hash browns about 3cm apart. Bake for 20-25 minutes or until golden around the edges.

6. Cool and Serve: Allow the hash browns to cool slightly before removing from the sheet. Serve warm.

Notes:

- Seasoning Options: Experiment with different seasonings like dried herbs, corn kernels, smoked paprika, or chili powder.

- Add bacon or breadcrumbs before baking for extra fat and a crunchy exterior.

- For a Crunch : Roll in panko breadcrumbs before baking.

Great lunch snacks or side dish.
