Potato Onion Soup

This rich, creamy soup combines the deep sweetness of caramelised onions with the hearty texture of potatoes. It's a nutrient-packed comfort food is perfect for winter and benefits from super cheap ingredients.

Servings: 4

Ingredients :

- 2 tablespoons butter

- 1-2 large brown onions, thinly sliced

- 2 cloves garlic, minced (optional)

- 750g potatoes, diced into small pieces

- 4 cups chicken stock (or any stock will do)

- 1-2 cups water

- ¼ cup white wine (optional)

- 1 teaspoon salt

- 1 teaspoon ground pepper

- 1 sprig fresh herbs

Instructions:

1. Over medium heat, melt the butter. Add the onions with a pinch of salt, coating them in the melted butter.

2. Caramelise Onions: Sauté onions, stirring every 5 minutes. As they soften, brown, and eventually caramelise, add up to ¼ cup of water or broth if they begin to stick or burn. The onions should be uniformly golden brown when done.

3. Add Garlic Stir in the garlic and cook until fragrant, about 1 minute.

4. Deglaze: Pour in the white wine if you are using it (or just use some of the stock), scraping up any browned bits for extra flavour. Cook until the wine is nearly absorbed, about 3-5 minutes.

5. Simmer Potatoes: Add the potatoes, stock, salt, and pepper. Stir in the herbs. Increase heat to bring to a boil, then reduce to low and simmer until the potatoes are tender, about 20 minutes.

6. Blend Soup: Use an immersion blender to purée the soup in the pot until smooth, or transfer to a blender in batches. Adjust thickness with additional water if needed.

7. Final Seasoning: Taste and adjust seasoning with salt, pepper, and/or lemon juice.

8. Serve: Ladle into bowls. Garnish with a drizzle of olive oil and fresh herbs. Serve immediately.
