Green Bean, Pear, and Walnut Salad with Bacon

Serves: 4

Ingredients:

  • 500g green beans, ends trimmed

  • 1 crisp pear, cored and sliced

  • 100g bacon, diced

  • 10 walnuts, broken into pieces

  • 40ml balsamic vinegar

  • 1 tablespoon olive oil

  • Salt and pepper, to taste

Instructions:

  1. Blanch the Green Beans:

    • Bring a large pot of salted water to a boil. Add the green beans and blanch for about 5 minutes until they are al dente.

    • Drain the beans and rinse them briefly under cold water to stop the cooking process.

  2. Cook the Bacon:

    • Heat the olive oil in a large heavy pan over medium-high heat.

    • Add the diced bacon and cook, stirring occasionally, until golden brown and crispy, about 3-4 minutes.

  3. Deglaze with Vinegar:

    • Once the bacon is cooked, deglaze the pan with the balsamic vinegar. Stir well to mix the juices, then remove the pan from the heat.

  4. Assemble the Salad:

    • In a large bowl, toss the blanched green beans with the bacon and balsamic juices. Season with salt and pepper to taste.

    • Arrange the sliced pear and walnuts on top of the beans and bacon mixture.

  5. Serve:

    • Transfer the salad to a serving dish and enjoy it warm or at room temperature. Crisp green beans, sweet pears, smoky bacon, and crunchy walnuts for a perfect balance of textures and tastes. Ideal as a side dish or a light meal!
