Watermelon Salad with Feta

Ingredients:

  • 4 cups of fresh watermelon, cubed

  • 1 cup of crumbled feta cheese

  • 1/2 red onion, thinly sliced

  • 1/4 cup fresh mint leaves, chopped

  • 1 tablespoon olive oil

  • 1 tablespoon balsamic vinegar (or white wine vinegar)

  • Salt and pepper, to taste

  • Optional: A drizzle of honey or a sprinkle of chilli flakes for extra flavour

Instructions:

1. Cut the watermelon into bite-sized cubes and place them in a large bowl. Slice the red onion thinly and set aside. Crumble the feta cheese and roughly chop the mint leaves.

2. Add the crumbled feta, red onion slices, and chopped mint to the bowl with the watermelon. Drizzle olive oil and balsamic vinegar over the ingredients. Toss gently to combine, making sure the watermelon and feta are evenly coated with the dressing.

3. Sprinkle with salt and pepper to taste. If you like a touch of sweetness, drizzle a little honey over the top, or for some heat, add chilli flakes.

Serve immediately or refrigerate for 10-15 minutes to chill. Enjoy this light, refreshing salad as a side dish or a summer appetizer!
