Roasted Cauliflower Salad with Home-Grown Herbs

Ingredients for the salad:

  • 1 large cauliflower, cut into small florets

  • 2 tablespoons olive oil

  • Salt and pepper, to taste

  • 1/2 teaspoon smoked paprika (optional for extra flavoir)

  • 1 small brown onion, thinly sliced

  • 1 large tomato, diced

  • 1/4 cup fresh herbs from your garden (such as parsley, basil, or coriander), chopped

  • 1/4 cup pomegranate seeds (optional for a pop of sweetness)

For the Dressing:

  • 3 tablespoons olive oil

  • 1 tablespoon lemon juice (or apple cider vinegar)

  • 1 teaspoon mustard

  • 1 teaspoon honey or maple syrup

  • Salt and pepper, to taste

Instructions:

  1. Roast the Cauliflower:

    • Preheat the oven to 200°C

    • Place the cauliflower florets on a baking sheet and toss with olive oil, salt, pepper, and smoked paprika if using.

    • Roast in the oven for 25-30 minutes, stirring halfway through, until the cauliflower is golden and tender. Remove from the oven and let cool slightly.

  2. Prepare the Dressing:

    • In a small bowl, whisk together olive oil, lemon juice, mustard, honey, salt, and pepper until well combined.

  3. Assemble the Salad:

    • In a large salad bowl, combine the roasted cauliflower, sliced brown onion, diced tomato, and fresh herbs from your garden.

    • Add some other greens, along with the pomegranate seeds if using.

  4. Dress the Salad:

    • Pour the dressing over the salad and toss gently to coat everything evenly.

  5. Serve:

    • Serve the salad immediately, with a sprinkle of extra home-grown herbs on top for added freshness and flavour.

Tips:

  • Home-Grown Herbs: Use any fresh herbs you have on hand; they add an amazing aroma and flavour. Parsley, basil, coriander, fennel, dill and chives work wonderfully in this salad.

  • Make it Heartier: Add some crumbled feta, goat cheese or even a can of chick peas for extra richness if desired.
