If you end up with left over onions in the cupboard here’s a simple recipe for making homemade onion jam
Homemade Onion Jam
Ingredients:
4 large onions, thinly sliced
1 cup (240 ml) balsamic vinegar ( or any type of vinegar will do - I prefer to use Worcestershire sauce )
1/2 cup (100 g) brown sugar ( or any type of sugar )
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 cloves garlic, minced [ optional ]
1 tablespoon fresh thyme leaves [ optional ]
Instructions:
1. Sauté Onions:
Heat the olive oil in a large skillet over medium heat.
Add the thinly sliced onions and garlic to the skillet. Sprinkle with salt and pepper.
Cook, stirring frequently, until the onions are soft and caramelized, about 20-25 minutes. Reduce the heat if the onions are browning too quickly.
2. Add Sugar and Vinegar:
Once the onions are caramelized, add the brown sugar and balsamic vinegar to the skillet.
Stir well to combine and dissolve the sugar.
3. Simmer:
Reduce the heat to low and let the mixture simmer gently. Continue cooking for about 10-15 minutes, or until the mixture thickens and achieves a jam-like consistency.
Stir in the thyme leaves during the last few minutes of cooking.
4. Cool and Store:
Remove the skillet from heat and allow the onion jam to cool completely.
Transfer the jam to a clean jar or container and seal tightly.
5. Refrigerate:
Store the onion jam in the refrigerator for weeks and weeks
Serving Suggestions:
Spread on toasted bread or crackers with goat cheese or cream cheese.
Use as a topping for grilled meats or sausages.
Serve as part of a charcuterie board.
